"This was so easy and awesome! I added a can of corn drained, a can of black beans drained and a can of diced tomato to the turkey mixture and it made it even better. I also crunched up a small amount of taco chips and threw them in there. It makes it a little higher in calories but if you used the baked ones you shouldn't be too bad, plus you are getting a lot of fiber from the beans and corn that I added. "I loved idea of the salsa & sour cream mixed into the meat filling. I used 2 oz lean ground turkey, sauted with some minced onion & garlic. After using homemade taco seasoning, I added 2 tbsp hot salsa with 1 1/2 tsp fat free sour cream. To jazz it up, I diced some zucchini, sauted it & added it to the meat mix. I also threw in some cumin & chili powder-but I like things nice & spicy! I left out the tomatoes since the salsa was good enough for me. I used a whole wheat tortilla, added a layer of fat free refried beans, along with the lettuce & used low fat mexican cheese. I couldn't even taste the zucchini & had a delicious flavor to boot! "This was a simple and very delicious salad. I used Recipe #121415 for my taco seasoning and I used those store brought taco salad shells. I was in such a hurry to dig into this that I forgot to add cheese but I promise next time I will :) Thanks so much for sharing your recipe."
"We loved this!! DH didn't even notice that the meat was turkey. That says alot, cuz he is a big red meat eater. It taste just like the real thing. I added some slice green onion and used grape tomatoes instead of chopped. I plan to use the left overs in a turkey enchilada dish. This is a make again recipe.
