"Potatoes baked with a core of bacon and scallion. You will have great fun experimenting with this recipe. I have made them using fresh herbs, garlic slivers and grated cheese. (Added post review) Some of the newer apple corers are much larger. Mine is made by OXO."

"I did not find this recipe to be all that good. The apple corer does not make a very big hole and I barely had enough room to put the bacon in let alone the scallions and cheese. I think it would work better if you used something larger than an apple corer. I won't be making this again."
"I really had fun with this recipe, made sure to find smallish, round potatoes and had no trouble coring them out with my apple corer - a little more trouble stuffing them! Also when before putting in the oven I rubbed the skin with olive oil and salt n peppered heavily. It was a 5 star rating just to see DH's face when he cut into this. Made for I Recommend Tag 2012"

"WOW! My mother adores twice baked potatoes, so I took this general idea and ran with it. I stuffed it with chedder cheese, extra potato pulp, scallions, and ham. Such and awesome idea! I made my hole pretty big tho, cut into it about 2-3 times to make a large hole. Great recipe, cant wait to make it again with other stuffings, spinach is next!"

"I liked the concept. My apple corer worked very well, made a very good sized hole - what I need is rounder potatoes, to make it easier to center the hole. Also, next time I will lightly oil the foil - some of my potatoes stuck and tore - and also sprinkle the exterior with paprika to add color. My bacon was very thick and my potatoes on the small side, so I used half a slice per potato. Because my "walls" were a bit thin, I did not stuff cheese in with the bacon, but I do agree that cheese would be a wonderful addition."
