"I really enjoyed this! It was inspired by a recipe I saw on Food 911. Careful with the cayenne. (I personally like it a little spicy, but use your own judgment) I also usually only make half of this recipe. (I'm the only one in the house who will actually EAT tofu!)"

" I am not a fan of tofu but I made this for a friend that is mostly vegetarian - I liked it and she loved it! I cut the recipe in half, used extra firm tofu and served it along side a lettuce, tomato & sweet onion salad with hot crispy rolls - excellent. I used the full amount of cayenne (I mean a 1/2 tsp plus a smidge for the half recipe). I did use "Hellman's Lite Mayo" instead of Soy Mayo. Excellent recipe, healthy and a nice change. You may have started to convert me to Tofu (I do like Tempeh) Thanks Koxmic Blues"

"Delicious! Had tofu salad from Costco once and loved it, but never tried to make at home. I cut everything in half for one brick of extra firm tofu, but left the mayo about the same as my tofu was really pressed and dry after draining. Used a homemade mayo recipe so not vegan, but still healthier than eating half a dozen eggs! Thanks so much for sharing a tasty recipe. Going to let hubby try this, as he SAYS he doesn't like tofu, then eats the yummy things I make for it anyway... ;-)"
"I grew up on Egg Salad. It was my favorite lunch as a kid for my mom to pack. When I thought of the idea of tofu egg salad at first, I didn't think it would be good at all. Surprisingly, I thought the recipe was great, a little extra salt and pepper to go with it, and throw it on a bagel in the morning. Great recipe and good egg replacement!!"
"I really like this "egg salad". I go to Whole Foods food bar and am always looking for their "egg salad" at 7.99 per pound. This is far superior and you know what you are getting. I use 1lb of extra firm tofu, keeping everything else the same. I made the vegan mayonnaise on the site as well and also add shredded carrots. It actually tasted like deviled eggs. I will be having this for lunch on a 7 grain bagel. This also will be great topping your favorite salad. Thank you. I just saved myself some money."
"I first made this 2 years ago. My 5 kids, aged between 3 and 10, absolutely LOVE it! It has a fantastic flavor and I serve it on sandwiches. The kids always ask for it and I make it at least twice a month. It's so quick and easy to put together and I love finding recipes that we all, as vegans, enjoy. We prefer it with the dill left out and just a pinch of cayenne pepper. I also add a little more mayo because I find it to be a little dry with the amount listed in the recipe. "In my opinion, this recipe was bland. I didn't have celery, so I used celery salt. I didn't measure the mayonnaise (veganaise) but I'm sure I used more than a quater of a cup. I used 5T dijon rather than 3. I used about 3/4C green onions added quite a bit of sea salt pepper, a dash of spike seasoning, and 2T pickle relish. With all of my additions I think it's just "good"."

"This is pretty good. I'm personally not a fan of using uncooked tofu so I sauteed the tofu in butter, garlic, salt and pepper. Browned it a little then mashed it up and added the other ingredients. I think you should add as much mayo as you like, more or less. Granted this doesn't taste exactly like egg salad but it's a great alternative. Thanks!"

"My "loathes tofu" husband actually liked this. I added 2 hard boiled eggs, celery, cilantro instead of parsley, and curry powder instead of plain turmeric. I ate mine with greens and spinach, he ate his as a sandwich. Thanks so much for posting a keeper!!"
"I am just about as far from a vegan or vegetarian as you can get but I love love love this salad. I usually just eyeball all of the ingredients, but always use extra cayenne. YUM!"
"I liked this recipe a lot. I made it with only 1 pound of tofu as some of the reviewers suggested though, and I think that made it a bit too overpoweringly mustardy. Next time I'll cut the *whole* recipe in half, I think. But it was quite delicious and I feel like I've made great strides in becoming a vegan, now that I know what tofu salad tastes like, and I like it!"
"I was a little nervous about this recipe like some others, but my partner and i both loved it. We have had it on sandwiches, used it as a dip with chips and the other night found ourselves craving it at 2 in the morning -- go figure. I made an "egg salad" sandwich for a friend of mine who hates tofu and he told me it was the best "egg salad" sandwich he had ever had. The best part was the look on his face when I told him it was made with tofu."
