"I've never made hash before, and I can't imagine why. This was so easy! I didn't have any leftover meat, so I just poached 3 chicken breasts and then shredded them to add into the hash. I also used one large onion instead of a small one, and added two garlic cloves. Now that I know how easy this is to make I'm going to be making extra chicken or beef just so I can make the hash the next day."

"To make it even easier, I use potatoes I have microwaved, leave the skin on, and when cool, I cube them. Any leftover meat is tasty, even polish sausage."
"This is exactly my mom's recipe, the only difference being is that she put leftover potatoes and beef through a meat grinder, along with the raw onion and often a green pepper. As much as I loved her Sunday pot roast, Tuesday night's leftover hash was even better; fried crisply brown with an egg on top, homemade dinner rolls, and creamed peas. To this day it ranks way up there as one of my favorite meals. Thanks for reminding me....it's been way too long!"
"Update: I have made this about 6 times now, and it is so versatile. We lucked out and had some leftover gravy from the crock pot pork roast we had the other night. The gravy on it was to die for! AND, I finally remembered to take a pic! End: Made this tonight & it turned leftovers into MORE delicious than the first meal! I used yukon gold potatoes, Vidalia onion, leftover pork roast (made from coca-cola pork roast), a smidge of leftover cooked carrot & Nature's Season. I hate wasting...I'm a recycling freak & this was some darn good recycled food! & what do ya know? We're gonna have it in a tortilla for breakfast...what's left of it. Thank you!"
"Really great! I used a very large leftover grilled steak and a grilled pork chop. I also served it with a fried egg over easy on top. Maybe it's a midwestern thing :-) Very tasty!"

"Delish and so simple! I made this with some leftover rump roast and added 1 crushed clove of garlic, some Creole seasoning and a little gravy to moisten after everything was finished cooking. We loved it! I have eaten corned beef hash before but never thought to use a regular roast. What a great way to use lefovers and we will definitely be making this again."
