Cook the beef in a heavy sauce pan over medium low heat in a bit of olive oil until browned and cooked through, about 5 minutes. While the beef is cooking, dice carrots. Add carrots, Simply Potatoes Diced Potatoes with Onion, and peas to the pan with the beef. Cook until potatoes and onions are slightly browned, about 3 minutes. Add water. Bring to a boil, then reduce to a simmer, partly covered, for about 20 minutes, or until softened. Drain the stew, reserving liquid. Puree the beef and vegetables, adding liquid as needed to reach desired consistency.
