"What a great sandwich Debbwl, I loved it. I used 2 large eggs instead of the egg substitute. I also halved the recipe and enjoyed it for my lunch today. A nice big thick sandwich, with perfectly scrambled eggs and very tasty fried sweet onions and red peppers. It had so much flavor. The sweet onions and red peppers really elevated this simple sandwich. Made exactly as written and wouldn't change a thing. Thanks for sharing this recipe, which I will make again."

"Our variation: Peppers and eggs is a traditional Italian sandwich my father used to make but without the cheese and we usually use cubanelle peppers. We also sometimes added sauteed mushrooms to the peppers and onions and served this on Italian bread. I like mine with mayo. Both ways, yours or mine, are delicious!"
"These types of sanwiches are commonly found in the Northeast, but rarely with cheese. I made it with Edam on Ciabatta bread with olives. It was really outstanding and BF and I really enjoyed it for an easy weeknight dinner. I used half real eggs and half eggbeaters, used less oil and less cheese (about 1 - 1 1/2 ounces) to save calories. Thank you!"

"Great sandwich that is warming and filling without breaking the calorie bank. I used a whole egg and 1/4 cup of egg white. No Edam in the house so I used what I had: fat free cheddar. It was most enjoyable and there is a *lot* of the egg filling!. You won't be hungry after having this sannie. :D"

"The DM and I really enjoyed this for breakfast I used 1/2 large red capsicum/bell pepper which I diced and a medium brown onion thinly sliced and 4 eggs and could not get it all between the two sandwiches so had some filling on the side and I used a sharp aged cheddar for my choice of cheese. When making again I think I will make it as an open sandwich as I found 2 slices of wholemeal/wholegrain took my blood sugar levels up a little on the high side. I did use thick slices of whole grain bread, toasted, & seasoned the eggs with lemon pepper instead of the usual S&P! Very nice change of pace for us, & a nice keeper recipe, too! I haven't had Edam for years ( I lived on it as a kid!) and really enjoyed it in this sandwich...throw in the peppers and the onions and yum!!

"What a yummy breakfast sandwich, so much flavor with the added onions and peppers!!! The only changes I made, was to scale it back to serve one and subbed in shredded cheddar cheese, which I added to the egg mixture while cooking and didn't use a whole onion or red pepper. "This reminds me a bit of the fried egg sandwiches we got from the corner cafe when I worked at a medical center. I make something like this, but just with plain scrambled eggs. Loved the addition of the bell pepper. I like to put my slice of cheese on the bottom piece of toast, then plop the scrambled egg on top of it, seems to melt a bit better. Great alternative for breakfast."
