"These muffins are a WINNER at my house! They are moist and delicious and I love the addition of the apple sauce vs. oil. If you have a food processor, those carrots shred in seconds and the rest is so easy to put together. They did stick to the paper liner a little so next time I will spray them. Definitely a muffin that will WOW your guests at breakfast/brunch. Made for ZWT9-Caribbean."

"I ended up making so many adjustments and subs that it got pretty ridiculous. I am not even sure if I should be allowed to review this recipe. I used rhubarb instead of pineapple, omitted pecans and raisins, doubled the coconut, used 3/4 cup apple sauce (ran out) and added 1/4 cup plain yogurt instead, only had enough carrots for 1 cup. I got 18 muffins and they are just great. Sorry for all the changes - they are not meant to indicate that i could do it better, just made to our preferences (we do not like nuts and raisins in baked goods)"
"These were great! We subbed in half spelt flour and omitted the raisins, just adding a little extra coconut and pecans. Love'em! The little devil on my shoulder thinks I should put cream cheese icing on them, but I'm trying to resist!"
