"This is a simple couscous salad. It is very simple and easy to make. I particularly like the pine nuts in this! Prep and cooking time do not include any chilling time."

"Oh dear I was so sure I had all the ingredients in the pantry with the exception of raisins so was going to use sultananas but I don;t know what happened to the safron so had to omit and then yes I had pinenuts just didn't realize they had been there too long so subbed walnuts and made as per recipe and 3 of us enjoyed with some left over. The dressing really lifts the flavours of this salad and I am sure the safron would make it even better. The DM had some leftovers for lunch today to which I added some ham, red capsicum/bell peppers, cucumber and red onion all finely diced and she thoroughly enjoyed."
