"This is another version of a favorite Greek recipe. This one comes with a bechamel sauce (which sounds French, but actually the Greeks had it first!). It also uses lasagne noodles, which makes it reminiscent to an Italian lasagne, but it is decidedly Greek. This recipe comes from Jeff Smith. I hope you enjoy!"

But no....I had to see this beauty that Leslie posted, and darn it to butterflies in the Spring...it called my name. I followed this exactly, except I made it vegetarian, just not putting in the meat, and still it produced a light, lovely tasting, most delicious bit of heaven on a fork. "I used rigatoni noodles and it worked out just fine. Layered in a casserole dish, this was reminiscent of a baked spaghetti dish I make. Two DS's ate this right up. Served w/garlic flavored crescent rolls, this made for a lovely week-night meal.

"WOW!! I can't even begin to tell you how much we all loved this dish! It was my first time making Pastitso, and I was a little nervous about whether or not my family would enjoy it. Turns out it was just amazing! I was surprised at how fats and easy it was to put together, much easier than a lasagna! I used spinach lasagne noodles and made the recipe exactly as written. I was not sure how much cinnamon to put in the sauce, but gave it a liberal dose, perhaps 1.5 tsp. and it was GREAT!
