"Awesome little cookie! DH took one bite and said "mmmmm, a healthy cookie too!". I didn't have the heart to tell him about the half cup of butter... LOL! I made these exactly as written except I had to leave out the nuts. I did use a cookie scoop and they came out beautifully round and tall. I like that you can see and taste the carrot. YUM! "These taste like carrot cake but without all of the hassle! Mr. Picky Eater said, "CARROTS?" when he saw them on the cookie sheet as I put them in the oven. A short time later, he followed his nose into the kitchen and ate one after another. I made him save me some so I can take a picture tomorrow! I used a rounded cookie scoop and got 18 large cookies. Mine took longer than the 10 minutes but that could be because I cooked 2 sheet pans at the same time rotating them half way through. I'm sure I'll be getting another request for these cookies again!
