About This Recipe
"A friend of mine, whose husband is Lebanese, gave this recipe to me. We had it at a church pot-luck lunch and I thought it was delicious and like nothing I had ever tried!"
Ingredients
- 1 chicken ( or 4 chicken breasts)
- 2 large onions
- 2 cups rice
- 5 cups chicken broth
- 2 tablespoons cinnamon
- salt and pepper
- pine nuts
Directions
- Clean and wash chicken. Boil chicken until well done. Remove meat from the bones.
- Saute onions in butter or olive oil until brown. In layers over onions, place boned chicken, pine nuts, uncooked rice mixed with salt, pepper and cinnamon. Pour chicken broth over all and cover. Cook until rice is done.
- May be served with a side dish of plain yogurt.
