"Nice to find a new twist on spinach salad- especially one that is diet friendly! I replaced the avocado with a hard boiled egg, as we are not avocado fans. Other than that, I made as written. While we liked the dressing, we both thought is was a bit too thick, and that it needed a bit more acid to make it really pop. Next time I'll double the vinegar, I think that should solve the problem. Thanks for a great salad!"

"5 Stars for the Dressing! Loved it! This was a very different spinach salad for me, with the avocado and bell peppers....I'm used to mushrooms, onions, and bacon! I used red bell pepper instead of yellow, because the yellow bell peppers just didn't look good at my grocery store. Otherwise, I followed the recipe. Delicious! Again....the dressing is fabulous!"
"This was just a terrifc salad all around! The dressing was perfect! I doubled the dressing amount and have quite a bit leftover and I am really glad for that! I added just a smidge of parmesan cheese to this for a nice salty flavor! Everything went so wonderfully together! I have never had avocado in a spinach salad and I am a convert! Thanks for posting!
