"These are simply amazing, easy, look fancy, are PACKED with fiber and there's no baking needed! Just a few minutes of stove-top prep and youre on your way to a fabulous cookie. Any type of nuts and fruit will work in this recipe, so have fun using whatever is in your pantry - I also always throw in a tablespoon of flax seed for good measure! Fiber One Honey Clusters cereal is a super high fiber cereal with flakes and clusters, so feel free to sub out any similar cereal you like (Honey Bunches of Oats would be perfect - I have even just done a combo of All Bran and Good Friends with great results). From eatbetteramerica. UPDATE: This morning I made just a half the recipe and simply pressed the mixture into a parchment lined 8x8 pan and it worked perfectly - just cut them into squares with a pizza cutter (dipping in water prior to each cut) after 30 minutes."

"I quartered the recipe (resulting in 5 cookies) and now wish I hadnt, because these are so yummy and disappear quickly! :)
I made a couple of changes due to what I had in the pantry but kept the essence of this delightful recipe: In place of the honey clusters cereal I used a mix of oats, coconut, flax seeds and bran shreddies. Instead of cashews I added walnuts. Following your lead I also used a sugar-free syrup.
THANK YOU SO MUCH for sharing this winner with us, JB! I was especially grateful for the hint of using the quarter cup to form these. So easy! :)
Made and reviewed for Veggie Swap #42 January 2012."
"Love these! I had a difficult time finding them on the www.eatbetteramerica.com website after making them and was planning on posting the recipe, but it is already here. Thanks. They are great and easy to make. They are a bit soggy when eaten right away, but get crunchier when they cool. This is a great snack. They could be made into a 9X9 pan if you do not have the time to shape them. Just make sure to spray the pan or line with wax paper."
"These are so delicious ! Yum yum"
"There is nothing not to love about these cookies. Fallow JB suggestion and used dried tart cherries. Made as written. Also fallowed JB suggestion of using a 1/4 cup coated with cooking spray and got 18 large cookies. Loved every thing about these will be making again. Thanks so very much for the post."
