"This is from Better Homes and Garden's Casserole Recipes cookbook; my grandma gave it to me years ago and it's the only recipe in it that I've ever made more than once (I've made it dozens of times). I use hot chili beans instead of the pinto beans, and use much more cheese and Fritos than written. For my family (DH and two boys) I always double it and it generally gives us one hearty dinner and a snack for my kids."

"Yummy! I used fresh onion instead of dried minced onion and browned it with the meat. It looks very pretty with the corn chips around the edges and the sour cream and cheese in the middle. I sprinkled chopped green onions on top for some extra color. Great kid-pleaser! Thanx for sharing!"
"This was very yummy for a quick Friday night meal. I used ground chicken breast, green enchilada sauce and Mexican tomato sauce. I did use 1/2 cup chopped onion to the meat and I'm always looking for a way to add another vegetable, so I finely chopped 1-1/4 cup green cabbage & added to the onion and meat to soften. The cabbage enhances the flavor, although it doesn't taste like cabbage (even DH didn't detect the addition). Thanks, Miss Diggy for posting!"
"Fantastic meal! I used Fritos and the only change I made was to use onion powder instead of onion to please my picky eaters. Although this recipe says it serves 10 -12, the 6 of us gobbled it almost gone, with one serving for my DH for lunch the next day. He says it was really good reheated too!"
