"This is a great recipe for using up tomatoes from the garden that aren't going to make it through your growing season."
1 1/2 cups
eggs, slightly beaten
green tomatoes, grated and drained
Mix together first three ingredients.
Sift together next 7 dry ingredients and add to first mixture.
Grate or chop in a food processor enough green tomatoes to measure 2 cups, being sure to drain off the liquid before measuring. Add 2 cups green tomatoes and 1 teaspoon of vanilla to the batter and mix well. Pour into 2 greased loaf pans and bake at 350 for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
