"Summer heat came late and left a bit early this year...leaving lots of green tomatoes! This "throw together" green tomato salsa was declared "the best salsa I've ever had" by my brother-in-law. Cooking time includes canning process."

"This was great! I made two batches, the first with green Roma tomatoes & I put most of the ingredients in the food processor. This batch was a light orange. Second batch I used the real green tomatoes (Big Boy & Early Girl) and cut up the ingredients into a more chunky size, and cut all the other ingredients by hand also. The texture of this salsa was much more chunky and was very green with red highlights. Both recipes were great and it's a wonderful way to use up the green tomatoes."
"We just made this today as I had about 10lbs of green tomatoes still in the garden. It is fabulous! After it cooked, I made a few adjustments - I added extra cumin and a teaspoon or two of chili powder and a little extra salt and it was absolutely perfect! I will definitely be making it and freezing it in party portions (pint size ziplocs) for the winter every time I have extra green tomatoes!!"

"This is my first time ever offering a rating and review to anything.... This salsa is so good, I felt compelled to join and do it. I made a 1/2 batch yesterday with my own garden leftovers, and we ate an entire jar before dinner. So, I found a local farm that has green tomatoes for sale and bought 10 lbs. Now, I am making enough for us to enjoy throughout the year, and to give away. I never thought I would say this, but maybe this is the best salsa I've had, and my husband agrees. I also looked up the toxin, an alkaloid called Tomatine, found in green tomatoes and the plant itself to check on safety. The "health.groups.yahoo.com" site has an interesting article on it, calling it relatively harmless and may even have some benefits."
"Thanks for sharing this recipe. I made two batches and omitted the cayenne pepper and added 1 more jalapeno to each batch, as we like our salsa hot. It turned out amazing! It was super simple and yielded a sweet, hot flavor. This is a fantastic way to use up the end of season un-ripened tomatoes."

"Great way to use up green tomatoes! This salsa was delicious! I used a mixture of green Roma, different large green tomatoes, and colored peppers of several varieties. I also used lemon juice instead of lime and dried cilantro instead of fresh (because it's all I had). I started out with 10 cups of tomatoes plus everything else and yielded four pints and a little extra. Thanks!"

"This IS the best salsa I've ever had. I made it for the first time last year at the end of the season and followed the recipe exactly. I just made it again this year and I didn't change a thing, except I am making MANY more pints to give away at Christmas time."
"Very good and tasty. It is a little too-lime for DH, so would suggest adding about 1/2 recommended lime, tasting, and then adding more if you want. Also added some more fresh chopped cilantro to the cooked salsa. This recipe's a winner for using up those green tomatoes. Thanks for sharing."
"Love this! I doubled the batch, using VERY green organic heirloom tomatoes. I roasted & charred 6 banana peppers, 4 jalapenos, 2 serranos, 3 medium white onions, 3 red bell peppers and 2 green bell peppers. I also added some pureed adobo chiles, in sauce (canned, store bought. It cooked up to a sweet, hot flavor that has been the favorite of the canning week. DH thinks it's a bit too limey, so I'll swap about half the juice for vinegar next time. Thank you for sharing. I was staring at 40 lbs of green tomatoes at a loss."
"This came together nicely, but I found it was too sweet and mild for my taste. Similar to a chili sauce or relish, I enjoyed this as a side for fish or a sandwich topper rather than a dip for chips."
"Thank you for helping me use those unripe tomatoes! I thought this would be sour, however it was not sour at all. I found it to have good flavor. Unfortunately I had to buy some jalapeno peppers, because I had canned all my remaining ones, and I got some killer hot ones! So I have exceptionally hot salsa. The taste is wonderful though. In fact I have used it as a base for a made-up southwest chili with black beans and corn that is pretty amazing. I will be making this salsa every season for sure!"

"After canning salsa for years using a recipe with ripe tomatoes, I must say this is an awesome recipe. My batch turned out thick and chunky and had great flavor. I added a tabkespoon of chili power and two small cans of tomato paste to the recipe. In addition, it doubles well. A For the super easy salsa recipe!"
"I made this salsa today, my wife won,t stop eating it. I followed the recipe for the most part. Changes I made as follows. Deleted the bell peppers, 1 tsp of Cumin instead of 2, 1 tsp of black pepper, 1tsp of sugar,1 tbs Lawry's seasoning salt. This was the best thing that ever happened to a green tomato. 5 stars"
"I made this salsa today, it turned out really good. I am new to canning, so this was fun for me to try my hand at salsa. I should have added more jalapeno, I didn't think it was quite spicy enough. I also halved the amount of lime as suggested by another reviewer. Really a good recipe and it looks super pretty in the jars."
"I am a huge salsa fan and this was by far one of the best salsa's I have ever made/had. It definitely had a distinct flavor from the traditional red salsas but it was wonderful in my opinion. I made a half batch using green tomatoes and some leftover heirloom ones. After opening a jar yesterday I have decided that I now need to make another batch tonight."
