"These potatoes are yummy, rich and decadent! They are not diet friendly but boy are they worth the extra calories! They're a nice change when you want something different than the same old mashed potatoes. This recipes makes alot so if you need less, it's easily cut in half. You can make these a day or 2 ahead and refrigerate until ready to use."

"Sooooo gooood!!! Very easy and the result is very creamy but still light. I decided not to peel my potatoes and mixed everything in my stand mixer. "This is like the Cadillac of mashed potatoes! wow! I had to cut the recipe way down, as there are only the two of us. I used 2 large baking potatoes, 1/4 cup of butter, 1/3 cup of sour cream, about 1/3 of the block of cream cheese,about 1/3 cup of parmesan, plus a little more for the top, and 2 green onions. It turned out do well! I made this for this and served it with Realtor's http://www.recipezaar.com/the-realtors-low-fat-low-carb-lemon-garlic-chicken-386436. Hubby loved it, and I havce to agree! "These potatoes as written are so rich and creamy. I believe by adding LF creamcheese and sourcream the rich and creaminess would still be the same. I opted out of the green onions and subbed garlic salt for the salt. Yum, Yum!!! Made for KK's Chef's Pick~"
