"These mashed potatoes are creamy, fluffy and slightly tangy thanks to the creme fraiche. A ricer is used on the potatoes to make them really smooth, but you could always mash by hand. Simple goodness! From Food & Wine. *Note: the mashed potatoes can be made ahead of time and kept at room temperature for up to 3 hours. Reheat before serving. (You may need to add a bit more milk.)*"

"Fabulous mashed taters! Although I didn't use creme fraiche, I used sour cream instead because it was all I had on hand. 2% milk did just fine too, it went great with my veggie loaf and some greens for a nice vegetarian comfort meal. Made and tagged for Veggie Swap 16."

"This is a very plain potato dish but still works well with main courses. I served this with meatballs which worked great! Unfortunately, my homemade creame fraiche did not set the way I wanted but I threw it in but this made it more like a chowder which bummed me out but my family still liked it, I may try this again but maybe after letting my creme fraiche set longer. ;) Made for ZWT5, Dining Daredevils."

"This was fantabulous. I had two Potato recipes picked out to make for tonight's meal for ZWT5 and hubby picked this one. I didn't use the ricer because he was still outside and my arthritic hands are beginning to bother, but just mashed, then stirred all together. The tang of the creme fraiche and the warm taste of the chives came through beautifully. We really enjoyed these taters! Thanks!"
