"I wasn't sure about this at first, but it looked so easy so I gave it a try. I was pleasantly surprised. I did add some chopped onion and garlic and I think that improved the flavor over how the recipe reads as is. It still was simple and cheesy. I may add an extra can of Rotel next time as well. "I actually posted this recipe on WW years ago. The trick is that it MUST be rotel tomatoes. Also, I don't use chicken broth. Just water. And I use 2% Velveeta. To make things more interesting, I add a bunch more veggies. Shoe string carrots, sliced mushrooms, cauliflower, artichoke hearts. It makes it really hearty and filling.
If you didn't like it, make sure not to substitute ingredients until you get the hang of it, This is a really easy recipe. I would add that once the veggies have cooked down and I add the chunked up Velveeta, I use a potato masher to mash up the veggies and mix in the cheese."

"I really liked this recipe. It was hearty and had a bit of a kick which I like. I did put my own spin on it though. I steamed cauliflower and pureed it and added it to the soup. It added extra nutrients and made the soup a little thicker."

"I added one chopped onion and 2/3 minced cloves of garlic to give this more flavor. Definitely use mild Rotel because it does have a little bit of a kick and may be too much for some people (and children). This was delicious! It certainly wasn't WW because I used regular Velveeta but honestly if you look at the package, there isn't much difference between 2% and regular. My toddler loved this soup and so did my husband. Other than the additions I made, I followed the recipe as-is and it was perfect."
"This was a good recipe, but the amounts of the ingredients puzzled me. I only used about 2 cups frozen broccoli; the full amount would have too much I thought. I had to add about 2 more ounces of Velveeta b/c the soup wasn't as thick as we'd liked. Perhaps draining some of the Rotel would have helped; I almost added a flour slurry to thicken it up. But the taste was fantastic. Make sure to cube the Velveeta; helps with the melting process & keep the pot on medium low so it doesn't burn. We had to cook it a bit longer to get the broccoli softened up to our liking. We will hopefully have this again w/ those changes!"
