"A really delicious potato salad. I've often added chopped celery to a potato salad, but I don't recall having come across cucumber in a potato salad. I allowed the diced cucumber to drain in a small colander and also pressed down on it to release excess liquid before adding the cucumber to the potatoes and other ingredients. I'd strongly advise doing this. For the dressing, I used a 50/50 blend of mayonnaise and Greek yoghurt. The basil was great in this, as was the addition of paprika. I made this last night, and have just enjoyed some for lunch. Thank you for sharing this flavoursome and easy to prepare recipe, BakinBaby!"
