"A quick easy meal that was very tasty. I had a couple cans of cooked chicken that really need to be used, so I substituted them. Also, I used a red pepper instead of the green pepper. I might up the vegetables next time with the addition of diced tomatoes. Thanks for sharing!"

"This is an excellent recipe. I like it because you can increase the size of the batch, split it and freeze it pretty easily and use it for different dishes. The first time we had it we put it into tortillas and ate kind of like tacos. You could also put in a tortilla, fill a pan full of burritos and put some cheese on top. One other way I was thinking was just plain with some cooked rice mixed in."
