"This soup is so good. I use 1 cup of Velveeta and 1 cup of shredded cheese in this soup, and it still comes out great!"
"In New Mexico, we add green chile to everything. It was really good in this recipe. Very good soup."
"What a delicious soup. I made this for supper tonight. It warmed our tummies. I followed the recipe exactly and it isperfection! My DH loved it (he loves all of NurseDi's recipes.though). I'm taking the rest for our lunch tomorrow. "
"Yowzer. This soup is awesome. Very rich and we love Velveeta cheese. The sour cream also adds to the richness. A great soup to warm you up of a nasty, cold day. Very easy to make too. I served with some warm French bread and salad. Thanks Nurse Di."
"One of our favorite potato soup recipe's!"
"After I changed it up, I liked it. I put 1 onion in it, 1 cup diced celery and 1 cup shredded carrot, 4 cups broth, 2 large russets peeled diced/small chop, 2 cups sharp cheddar cheese, 2 tablespoons chopped fresh dill, 1 tablespoon diced dill pickles and 1 tablespoon yellow mustard . This adds to the cheeseburger flavor!!"
"Wow! This soup is incredible, followed recipe as directed and it is delicious. Had to give it 5 stars and add to my soup recipes as a favorite."
"I've made this a couple of times now and my family loves it! The leftovers don't last long either! I like some of the suggestions for additions or substitutions so I'll definitely keep experimenting with it."
"Great soup. Made half a recipe and DH finished it all. Did use 1/2 c. Mexican blend and also pepper jack cheeses."
"great recipe! i was trying to recreate a cheeseburger soup that i had at a local deli and this was a great base recipe for it. i omitted the potatoes and carrots, and i added 1/2 cup of chopped dill pickle (i know it sounds weird, but it really gives it a genuine cheeseburger kick!) i also used 1 1/2 cups velveeta and 1 1/2 cups shredded cheddar. it was a big hit! i will definitely be making this again..."
"I've been making this recipe for years, but never rated it! It's AWESOME! Velveeta now makes a Sharp Cheddar flavor and it made it even better! My kids love it, husband, EVERYONE! I often take it to pot lucks at church and everyone always asks for the recipe. Thanks for posting it!"
"Yummy! My whole family loved this soup. It would be great also to use wild rice instead of potatoes next time."
"Wow!!! This soup is awesome, my families new favorite. Thanks for sharing. The only thing I changed was I used home made veggie broth with low sodium chicken bouillon because I was out of chicken stock. It was delish. We will be adding it to our regular winter dinner list. Thanks."
"What an absolutely delicious comfort food!!!!! I even forgot the last step with the sour cream. So delicious! I just hope the fat content wasn't correct."
This recipe is easy to convert to a special diet, which is a big plus. I subbed out dairy-free cheese, sour cream, and margarine, as well as using dairy-free chicken soup stock, and it turned out perfectly. Looking forward to making this again!"
"My husband and I think it is really good and I will add this to my collection. If I had to describe the soup, I would say it is "queso dip gone healthy"! Although, you can't really taste the veggies. We dipped some homemade soft prezels in the soup and it was excellent. I think it would also be yummy in a bread bowl or with a side of sourdough bread. Thanks!"
"Very good soup. The family enjoyed it just as written. Did have to add some liquid to the butter and flour mixture as mine just clumped up. But that did make it work."
"WOW! I think this stuff is awesome and very easy to make even with its 40 minute prep time, but worth it. I used 4 cooked ground beef patties left over from my daughters party. I used 2 cups beef broth and 1 cup chicken broth instead of 3 chicken. And I also used 1 cup Velveeta and 1 cup Cheddar cheese. Otherwise, I followed recipe to the 'T' and will definitely make again!"
"Even my husband said that he couldn't think of anything to change about it (which is unusual). The only change that I made was the use of frozen prepared meatballs in place of browning meat, just because I had them in the freezer. I will be sure to use a bigger pot next time because I started this in a 3 qt pot and had to transfer it to my stockpot about halfway through because I was making a big mess that way."
"This soup really hit the spot tonight. It made a lot of soup, but that's great because now I have lunch tomarrow! The kids even had seconds. Thanks for sharing your recipe, we enjoyed it very much!"
