"For this recipe I use frozen chicken tenders or chicken breasts (yes, frozen) in my slow cooker. This is a good recipe to substitute beans, veggies, etc. and make it the way you want. This will make 10 "healthy" servings (thats 1/2 a chicken breast) so judge your servings on your families appitite."

"This was good! Kind of like my chicken tortilla soup minus the tortillas. I had 12 tenders and 1 chicken breast. I added a little red pepper. When it was done, we ate like soup with cheese and sir racha on top."

"Loved that this is healthy. I cut the recipe in half and used thawed tenders. Mine did a self shred so I served it over rice. I drained the black beans so the liquid was perfect. It was like a nice thick stew. DH raved about it. The only thing I did different was to add some chopped cilantro on top. I cooked mine for 3 1/2 hrs before adding the cream cheese. Delicious. "The whole is WAY better than the sum of it's parts. We followed this nearly to a tee: a little less chicken (it's all we had), a few dashes of garlic salt, paprika, and chili flakes. Delicious and super simple. I'll definitely make it again."

"This was AMAZING!!!! I made a couple of changes....but not much! I only used 3 chicken breasts cut in half. I also added about 10 mushrooms cut in half, and 1 red pepper cut into chunks. I cooked on low for 6 hours. At the same time I added the cream cheese, I took the chicken breasts out and cut them into chunks. This was seriously the best slow cooker recipe I've EVER made!!!"

"I made this in my pressure cooker since I didn't have a lot of time. I halved the recipe since I didn't need 10 servings. I did end up adding some extra spices & some Velveeta to give it some extra flavor. Overall, it was a good dish. Made for Went To Market Tag"
"This was excellent and super easy, my whole family loved it. The only thing I changed was I used a 14 oz can of cilantro lime rotel instead of the diced tomatos. I served this with warm flour tortillas and white rice. At the end of cooking I shredded all of the chicken. I did not even need the rice, everyone just piled the meat on the warm tortillas and loved it!! I have to admit, it looks none too appetizing while it is cooking, but don't let that you stop you it is absolutley delicious."
"OH MY GOODNESS! This will be on my family's favorite list! And low in fat to boot. I fooled with the recipe a bit, but for no less stars. After reading the directions, I thought removing liquid might not be in my time-frame. So here's what I did: I cut the chicken breasts into good sized cubes, drained and rinsed the beans, which is just something I always do. Used canned corn and drained it and added one can Ro-Tel undrained. I used a medium spicy salsa, just a store brand. And I had the soft lowfat cream cheese. Served on brown rice. It was only a bit soupy, but we like it that way so it soaks into the rice. THIS RECIPE HAS A FLAVOR PUNCH! Yummy sounds from me, husband and picky daughter! This is such a keeper Annacia! "This is a great, easy-to-make and hearty meal with just enough spice. I used Rotel tomatoes and added 1 can of V-8. I also shredded the chicken, so we had it more like a hearty stew. My dh had 3 bowls of this--raving it about it with each bowlful! We will be having this often!"
