"Just when you thought you had enough zucchini recipes. This one comes from the Monks at Mepkin Abbey in So.Carolina. They grow their own chickens and sell the eggs to make a little extra. (The eggs are delicious!!)"

"This was really good. I totally enjoyed it. It was simple to make, i threw it together in under 5 minutes. It reminds me of the impossible Bisquick quiches, was really rich and eggy. I did increase the garlic to 2 cloves, added about 1/2 cup grated mozzarella and subsitituted fresh basil for the dried herbs. Even my zucchini hating husband admitted that he enjoyed it! Thanks for a great, easy recipe Pat!"
"I've used this recipe several times and really loved it until I looked more closely at the Nutrition Facts. Bisquick baking mix unfortunately has 1.5g of Trans Fat and the company has no intention of taking this out according to their Customer Service line. This made me question all the nutrition information and feel it should be taken with a pinch of salt."

"I didn't care for it. But my father and step mother loved it so I think I just don't care for zucchini cooked this way. Easy to make and turned out like the picture. I'm still giving it five stars because my parents loved it and ate 2 pieces each."

"My zucchini was somewhat old and I should have shredded it instead of sliced. I used 2 cloves of garlic and 1 small purple onion for this. It came out quite dry. Not sure why-only thing different was I used low fat Bisquik. May try again and use someone's suggestion of mozzarella instead of Parmesan. It was tasty but no one ate the leftovers."

"We loved this. I made it with sharp cheddar and sauted the onion with 2 cloves garlic. I omited the italian spices and just used generous amount of black pepper, the salt and sprinkled some paprika on top with a tad of shredded cheddar for looks. The textures of this pie are way better than a quiche and even Bisquick's Easy Vegie Pie which I love as well. Thanks Pat!!"

"very yummy and easy to make. Not disimilar to a quiche. It's nice that it doesn't have any milk in it. I didn't have biscuit mix (scone mix here in australia) so subbed for 1 cup of gluten free flour, 1 1/2tsp baking powder and rubbed 1 tbsp of butter into that. Also halved the oil and made it up the rest with cream and used 2 garlic cloves. Very versatile recipe too, could very easily add fried bacon, grated carrot, parsley, paprika etc. Thank you very much for posting. PS. it was very puffy and mushy when it first came out of the oven and kind of sloppy, give it a few minutes and it firms out nicely and it much easier to cut and serve ;)"
