"This is easy but the potatoes will need a few hours or overnight soaked in cold water, the garlic powder and seasoned salt may be adjusted to taste, I have left the cayenne as optional I like to add it in for a little heat, if you are not a garlic-lover then omit the garlic powder --- throw in some chopped green onions the last few minutes of cooking if desired :)"

"These home fries turned out so nice and crispy -- I think that soaking the potatoes and then leaving them in the fridge made quite an improvement in the texture of the cooked potatoes. They didn't get overcooked and dark in the pan in order to turn out nice and crispy. I tried using the cayeene pepper, but even though I like spicy food, I felt even a pinch took away from the home-fried potato taste I'm used to. Again, your directions on how to soak the potatoes made a real improvement in the texture of this dish and I can use it for many other potato recipes as well.
