"Hello Cooking202; As they say, "this cake is to die for". The best coconut cake that I have ever had. Tried many different coconut cakes in Hawaii and they were also good, but do not compare with yours. "Love this cake!! I made this for Mother's Day and it was delicious! The only changes I made were to use a butter flavor cake mix and I baked it in a 13x9 inch pan. It's so moist and flavorful and not overly sweet. I think this definitely needs to be made ahead of time, because the frosting needs time to blend together so that it doesn't taste sour creamy. I toasted a little extra coconut on the stove in a frying pan for a few minutes to give it a little extra color and it looks beautiful!! Thanks for an easy and delicious recipe!!"
