"These quesadillas have lots of flavor. My sis found the recipe in the "Food Lovers Weight Loss Cookbook" put out by the editors of Health Magazine. The original recipe uses crab meat but I don't have access to good fresh crab meat. We've found that you can use just about any meat. I've kept it written low-fat but use full fat ingredients myself. In the book, these are paired up with a Pan-Roasted Corn Salsa that is quite excellent."

"The poblano cream is so yummy, just the right touch to dress up a quesadilla. I used black beans in place of the chicken, and served them alongside a corn and potato chowder. I do want to point out that the green onions are missing from the ingredient list; I didn't happen to have any on hand so I just left them out. I would suggest using gloves when working with the poblanos..."
"I made two quesadillas and served with Recipe #78189. Great flavorful meal. I used flour tortillas, cooked chicken, one half roasted poblano and one jalapeno pepper. We will have this again soon."
