"you love spinach then this is an easy and simple dish"
4 (10 ounce) packages
blue bird frozen creamed spinach
hot dog, sliced
onions, halved and thinly sliced
leeks, split lenthwise and thinly sliced
potatoes, finely diced
salt and pepper
1) heat the oil in a heavy pan over medium heat'. add the onion and leek and cook stirring occasionally, for about 3 minutes until they are just beginning to soften. Add the potato and season with a pinch of salt. bring to a boil ,reduce the heat, cover , and cook gently for about 25 minutes until the vegetables are tender.
2) Add sliced hot dog and spinach and continue cooking for 3-4 minutes, stirring frequently. set soup aside to cool slightly.
3) Transfer the soup to a blender or food processor and process to a smooth puree.
4) Return the soup to the pan and season to taste with salt,pepper. place over low heat and simmer until reheated .
