"I've made this a few times now. I double the recipe to make a 9x13, and it never lasts more than 24 hours. It's delicious & looks wonderful! It's so good I've even shared it with friends & house guests, and they all think it's great! My 2 & 6 year old boys love this as well! It cuts nicely into squares. It tastes like a snack cake rather than a dessert cake, but it does NOT taste "healthy" or low-fat! I leave out the dates & confectioner's sugar topping. Instead I top it with a streusal topping (the topping listed in recipe 15937 but I replace half the margarine with apple sauce) before putting it in the oven. I also replace 1 Tbsp. of the whole wheat flour with 1 1/2 tsp. ground flax seeds & 1 1/2 tsp. wheat germ to make it healthier."
"This is a truly delicious cake! I used fuji apples, and a 1/2 teaspoon of nutmeg. I also baked it in an 8 inch pan. Next time I think I'll reduce the sugar a bit. This is a definite keeper!"
"We really enjoyed this, just goes to show that you CAN get a lot of flavour with less sugar. I used half whole wheat and half white flour and misread the 1 teaspoon of cinnamon for 1 tablespoon (but we love cinnamon, so this was actually a good thing). Thanks for posting it, Derf."
"Nice little cake. Very dense, but packed full of flavor. I didn't have any powdered sugar, so I added an extra Tbs or two of sugar. I also used date sugar. I would cut down the nutmeg (I actually substitued mace, but the flavors are very similar) to about 1/4 tsp, but as-is I think it is a tad overpowering. Maybe not if you use fresh? Pretty good, though. Tastes as healthy as it is."
"No more calories or fat than a serving of angel food cake but a totally different look, texture and flavor. This is a dense, moist snack cake and it's very, very good. If you've got a food processor to "shred" the apples and enough snackers, I recommend you double the recipe and bake it in a 9x13 dish. It's a bit of work so why not get twice the cake for your efforts?"
