"I was in the mood for an omelet (love omelets!) and also wanted to use up some ingredients that I had on hand. I came up with this yummy omelet that has the delicious flavors of eggs, tomatoes, basil and feta cheese. Measurements are an approximation...you can use more or less to your liking."

"Very tasty breakfast. I used a combination of egg substitute combined with a whole egg. The tomato was small and was sliced instead of chopping. Really enjoyed the burst of flavors from the sweet tomato combined with the fresh basil and feta. Additional basil was sprinkled over the top for garnish. Made for *ZWT 4*"
"Yum! What a great different omelet. IMO the basil really makes this omelet. The saltiness of the feta with the sweetness of the tomato blends together with the pungent basil flavour. "A delicious and versatile breakfast that was ready in minutes. I used two eggs and 2 tablespoons of tinned tomatoes. Also added some gorgonzola and provolone that I wanted to use up. Next time I might add chopped olives, too. Yummo!"
"This was wonderful. I did use 1 whole egg, 2 tablespoons drained diced canned tomato because that is what I had on hand, 4 leaves of fresh basil, and the tablespoon of tangy, salty, and creamy feta. So good and a must try."
