"Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!"

"How easy was that? My butcher gets freakishly large chickens, so one breast-half was MORE than enough for the two of us. I sliced it against the grain, and fanned it over spanish rice. "This is a GREAT recipe for those nights when your back's to the wall and it's dinner time and everybody is hungry.
I followed the recipe pretty closely with the exception of not measuring the taco seasoning. I jut put a Lawry's taco seasoning packet in a 1 gallon zip lock bag and tossed in my patted dry with paper towels chicken breasts. I forgot about the sour cream since I was one of those hungry people, but it was really delish anyway. It reminded me of chicken enchiladas sans tortillas.
It was super easy to make, and that is a BIG plus in my book."
