"This is a delicious extra creamy rice, if you like a little heat then add in a pinch cayenne pepper --- I have made this using converted long grain rice instead of aborio, it turned out well but the Aborio is much better to use --- you may use fresh sauteed mushrooms in place of canned or use frozen peas instead of mushrooms --- do not add in any extra salt until the rice has finished cooking, and add in only if needed --- this recipe may be doubled :)"

"This is just the yummiest stuff ever! So creamy and really not difficult to make. Made some to take to a friend with a new baby. Thankfully I saved some for us. We used the frozen peas as I'm not a big fan of mushrooms. Also used a blend of Parmesan and Asiago and Romano cheeses as that's what I had on hand. "Kitten...is there a recipe you have that isn't perfection??? Wow do we love this!!! I made this tonight and added 4 cloves of garlic and a shake (or two!) of crushed red pepper flakes. I only had cream of chicken soup and I used fresh mushrooms. I used 1% milk and there was absolutely NO need for extra parm at the end. It was creamy, perfect, delicious and heavenly. My husband is standing by the sink devouring this and dinner isn't even on the table yet. Kitten...you're the greatest!"
"This was very good and easy...we had leftover BBQ salmon and threw that in along with some fresh asparagus and mushrooms. We used long grain rice and had to cook it about 20 minutes longer than listed...not sure if it was the rice, the oven or the addition of the veggies - regardless it was absolutely wonderful for dinner and just as good for lunch the next day."

"WOW! I would give this 6 stars if possible! This Italian girl has found a short cut for excellent risotto without compromising on flavor! It was so nice to be able to focus on the main course and not have to worry about stirring risotto! Excellent recipe. I sauteed fresh mushrooms in place of the canned and it turned out perfect. Also, I stirred at 15 minutes as suggested, but then forgot to remove the cover for the last 10. Once I removed it (with 5 minutes left on the timer), I still had to cook it for 10 minutes to absorb some of the liquid. Most Excellent!"
"Excellent rice! Good risotto without the work. I followed the recipe as written although I didn't have an ovenrpoof saucepan that was the correct size, so I used a 1.6 litre corningware dish with a lid. It worked perfectly. I agree that the rice needs to be stirred ssoner than is stated in the recipe. I willefinitely make this recipe again."
"I found this so easy to make and was surprised at just how rich and creamy the flavour was! I put some chilli flakes in for extra kick too. I didn't add more parmesan as it was already so full of flavour. It rivals risotto made on the stove top for taste and texture. Next time I might stir it after it has baked for 15 minutes though because it was a bit difficult to break up the rice when stirring it at 25 mins. Loved it, thanks KittenCal!"
"NEVER have I attempted to bake, TRUE! Was a bit nervous about too! OMG!! This is GREAT! Recipe IS first rate! Used red onion as is personal taste for me! Successful dish ALWAYS great to see!
