"What can I say....My all time 2 favourite vegetables, rolled into one. My DS & I always mix our pea's with my potatoes when they are served, and DH justs sit's and watches the 2 of us create this mashy mesh to eat and shakes his head in shame! lol
BUT now here is the recipe that does it for you!
I used minted peas, and some dried mint as I did not have any fresh mint, ohhhh and cream and followed the recipe as written......... Ohhhh so smooth and creamy and just divine!!!! DS and I adored these Boomette.
I will be making this recipe a lot more often now!

"These are really good! I didn't have any fresh mint so used 1 teaspoon of dried mint. Otherwise, I made the recipe as specified. I served it with barbequed ribs. This is a dish that we will definitely enjoy again."
"I'm trying to watch my fat intake so I cooked the potatoes in fat free chicken broth and used the same to warm up the peas and mint. A little dollop of butter and a shot of milk made them seem rich. I liked the peas and potato combo and the mint was a definite change. Actually, DH was so busy examining the new flavors and additions, he never noticed the lack of fat. ;-) Cool trick! "I made these last night. Because I was feeding my 8 month old twins some of it too I pureed the peas before adding them to the mash potatoes. The twins love mint but dont like peas. They gobbled this right down. I will admit green mash potatoes are not too appealing to the eye but the twins didnt care about the looks."

I used four large russets that I peeled before boiling and once tender riced; Added 3/4 cup of cream, 1 cup peas, 1/4 cup mint right from the garden and 4 tablespoons of butter found a little dry so added some chicken stock to keep the fat down.
