"This is quite tasty, the jalapeno pepper is only optional I like to add in for extra heat, Italian sausages with the casings removed may be used in place of the ground beef or use ground turkey, I also like to add in some cooked crumbled bacon or smoked dry sliced sausage but that is only optional :)"

"I made this exactly as stated in the recipe and it was very tasty. Kids came home and grabbed a bowl and everyone said it was a "do again" recipe. I had friends over for drinks later and they sprayed a cookie sheet with non-stick spray, placed corn tortillas on pan and topped with filling and put cheese on top. Topped with sour cream after taking out of the oven and was delicious. They weren't baking fast enough for everyone. It's great to find a recipe that's versatile."
"I made this for supper tonight, cut up the pepper and onion before I left for work. Truly took 30 minutes to make. I used ground turkey, skipped the jalape?o pepper (hubby & I like them, kids...not so much). Also didn't add corn or peas, thought there was enough starch with the rice (used brown minute rice). Also used much less cheese, about half cup, and then sprinkled a little over each serving. Everyone loved it - definitely a make again meal."

"SOOO Yummy! We left out the jalapeno and used petite tomatoes instead of stewed. I also used homemade taco seasoning. It was one of the best meals we have had lately. Everyone had seconds, including my 6-year-old daughter (and that speaks volumes!). We would have all that thirds if there had been anything left. Most definitely a keeper!"
"I made this for dinner today. I didn't have minute rice, I used brown rice and precooked it for 30 minutes. I also didn't have zucchini and I subbed 2 cups kidney beans.It went together quick and easy, as I had pre chopped onions and green peppers in the freezer.We really enjoyed this as it was quite tasty. "Very good flavor! Not a fancy dish, but it comes together quickly, especially as I had chopped peppers and onions in the freezer. I cut the recipe in half for the two of us, and it still made a good 4 servings. (Leftovers!) I cooked regular rice on the side, then added at the end. 1/2 cup dry rice was almost too much in my opinion; next time I'll use less rice but just as much seasoning. I did add more cumin and SMOKED paprika, which makes it awesome!"

"this was really good and i didn't have cheddar so i subbed with velveeta. very yummy and cheesy. also i didnt have green onion so i used regular yellow onion and served it over a bed of white rice instead of mixing it altogether.. delicious! put a few too many shakes of hot pepper sauce and thge jalapenos ina jar but wasnt unbearable.....lol"
"Great! This was so easy... I loved that I could walk away from this for 20-25 minutes to multi-task :-) It made so much (when cooking for 1-2) that I will be able to take some for lunch and freeze some to enjoy again! I was unfortunately missing a couple ingredients (zukes & jalepeno), but the base of this recipe is good enough that one can play around with any number of different ingredients & still come out with a fantastic EASY meal. I put a can of black beans in mine, and topped it with some jalepeno cheddar. Thank you for this recipe... YUM! :-D"

"This was good! It made a lot more than I was expecting but I am very happy to be eating the leftovers. I did have some trouble with some of the rice at the top of the pan not absorbing any liquid and still being crunchy while the rice on the bottom was done. I added more liquid and cooked a bit longer to solve the problem but the rice on the bottom ended up being a bit mushy in the process."
