"This is amazing! Wondered where the soy/almond milk was but took it on faith and followed the recipe since the maple syrup and banana provided plenty of moisture and it is delicious! The maple syrup gives it a rich flavour, I can't imagine replacing this beautiful flavour with agave as some reviewers have mentioned, but to each their own. Highly recommend and try the original version before you start making changes...it's perfect as is. Having said that, will have to make a chocolate chip, nut free version for my daughter's school lunches. Thank you for sharing!"
"made this recipes a few times, making adjustments as I usually do.
I used 2 cups of spelt flour (have also used soft whole wheat flour), 4 organic bananas instead of 3, 1/3 cup of Earth's Balance in place of the oil, only added 1/3 cup of organic cane sugar because I added a handful of semi-sweet chocolate chips, 1/3 cup of soymilk(have also used almond milk) and added 2 egg replacers .If I have them, I have also added organic walnuts Wow, this would be my favorite version yet- just mildly sweet and very moist and cake-like. It does not taste vegan at all."

"Wonderful bread! The maple syrup allows for such a fluffy batter and finished product. My family loves this! Sometimes I add in chocolate chips or cranberries and bake in muffin tins. This morning I was out of bananas and improvised with 1 cup of applesauce in place of the banana. I added a few chocolate chips and the muffins were excellent! "This was yummy! I didn't have spelt flour and although I was a little hesitant to make it without it, I went ahead in faith and just used the whole wheat flour I already had. Worked just fine! I only had about half a cup of walnuts and used those in the mixture. This was very easy to make. I'm wondering though, how much vanilla is suppose to go in? It wasn't listed in the ingredients but is listed in the directions. Maybe you just forgot. I gave a guess as Im sure most can and dripped a little in. Blessings to you in Jesus' name!"
"Great flavor and texture. I used walnuts instead of pecans. I'm a fan of Hildegard von Bingen, a forward- thinking religious woman of the early 12th century in Germany. She extolled the virtues of spelt in one's diet. Don't know if she ever had bananas, but that's ok!!!"

"It's not just "healthy" good, its regular good, too. I used unsalted butter instead of oil. Next time, I think I will add cinnamon and nutmeg like some of the other users have commented. Very easy recipe, I will save it to use again. I had to cook mine longer because I was impatient and did not let the bananas thaw completely (they were still very cold). This may be why another baker said they had to cook theirs a very long time?"
"Well, I did make quite a few changes, but I don't think it changed the essence of the recipie too much, so 5 stars from me! I used just slightly less maple syrup, but I think the full 1/2 cup is fine. I used unsweetened applesauce instead of the oil, kamut flour instead of spelt and omitted the pecans. I also added 1tsp each of cinnamon and vanilla. Oh..and I added two butterscotch chips on top. I made 36 mini-muffins and baked for 10min. I was impressed with the texture and taste! These are great little grab and go guilt-free treats! Thanks :)"
"Hmmm...I think 5 stars is fair, being that I didn't exactly follow the recipe! I used about 2 T. molasses, and the rest brown rice syrup for the sweetner. Then, instead of nuts, I added 1/4 c. dried, unsweetened coconut, 1/4 tsp. cardamon, and 1/4 tsp nutmeg. Well, I ended up baking this FOREVER! I took it out of the oven at 47 minutes, and turned it out onto a cooling rack only to have the loaf split and leave a layer in the bottom of the pan. Where it broke the bread was still almost wet. So, I put it back into the oven for another 10 minutes, and the middle was still gooey. So, I put it in yet again. Then, it occured to me that the rice syrup might not actually set up until the bread cools off. So, we will see. The flavor of the bread is VERY good. I just hope it firms up a bit!"

"What a treat! It definitely lived up to the description of earlier reviewers. I used 1/2 tsp of vanilla, all of the maple syrup (love that stuff) and did not add any cinnamon. Also, I used a 4 1/2 X 8 1/2 loaf pan and it fit perfectly. This recipe is a keeper!"
"I was so impressed with this recipe! The texture was perfect, and it tastes wonderful. I baked the loaf for exactly 42 minutes. I took the advice of White Rose Child and used 1 tsp of vanilla, and halved the maple syrup. I also added 1/2 tsp of cinnamon. Thanks for a super recipe!"
"Absolutely fabulous. Well, I don't know about it as a loaf, but this made killer muffins. I used frozen bananas; halved the maple syrup and it was still plenty sweet. Beautiful texture. A delectable breakfast treat. BTW the amount of vanilla is not specified so I used 1 tsp. I got 9 nicely-sized muffins. (I sprinkled on some cinnamon sugar too!)
