"Eat n' Park is a popular local restaurant chain in my hometown of Pittsburgh, PA. They are rightfully famous for their salad bar and scrumptious baked goods. These strawberry creme muffins are (almost!) like the ones served at their breakfast buffet. This recipe originally appeared in the Kitchen Mailbox column of the Pittsburgh Post-Gazette, June 21, 2007."

"30 minutes is too long to bake - 20-25 is more than enough. A quick and very easy way to dispose of strawberries that aren't worthy of eating by themselves. Tastes just like Eat n Park."

"We loved these! I made them for a church function and made mini-muffins. I doubled the recipe and we had more than enough to for church and some for us to have snacks later on. The only thing I changed was to add about 1/2 t. of cinnamon to the dry mixture since I love the strawberry -cinnamon combination and have a strawberry bread recipe that calls for cinnamon. Topped with "sugar in the raw" before baking and they turned out perfect. Baking time for mini-muffins is about 15-18 minutes and I did line the muffin tin with the muffin papers."
"I've never heard of Eat N' Park but the recipe sounded delicious so I tried it. I'm currently pregnant with a bad swelling problem so I was looking for low sodium breakfast type recipe options when I came across this recipe. The recipe was easy to make and the muffins came out absolutely wonderful. Too bad they wont be my breakfast... my husband ate them all! I will definitely be making these again."
