"I think this salad is A-Maize-Ing. My neighbors and husband loved it. I used fresh corn off the cob because it is in season. You can use the fritos to dip in the salad or out on top. Be sure to put the fritos on right before serving or they will be soggy. You could add a lot of things to this salad like bacon or black beans, but we decided not to mess with a good thing."
"This was so so good! My husband ate it for lunch and dinner three days in a row. Probably not the lightest salad around, but next time I could sub some low-fat mayo to help that. It got better and better the longer it sat in the fridge (I left the crushed fritos separate). Will make again this summer!
Update: Made with low fat sour cream instead this time, just as delicious and lots less calories and fat!"
"Made this for a pitch-in and it went over very well. Good and tasty flavor. The next time I will either add a tad more mayo or not crush the corn chips as much as it turned out a little dry. Or maybe I'll try a different brand of mayo. Either way I will be making this again."
"This was really good - took it for Easter and every bite was eaten. I used one can of corn and one can of Mexi Corn. In place of the Cheddar Cheese, I used the Four Cheese Mexi Blend. I added garlic salt and a 1/4 tsp of cayenne pepper, yummy!!!"

"I just prepared this dish, it is chillin right now. I used 3 large grilled corn on the cob,cuz i needed to use them . I took advise from other reviewers and used 1/2 lite Hellmann's and 1/2 lite sour cream, omitted the bell pepper ( my friend hates them ) and I am making it for her 33rd wedding anniv. party. I sub with 1/2 of a jalapeno. I also added about 1/2 tsp of chipotle chili powder to the mayo/ sour cream mixture. I will of course add the fritos when served. I will post the results after the party. I don't think I've made anything of Paula's, that was dissapointing.. Chao!"
"We thoroughly enjoyed this colorful and delicious salad on the Fourth of July! I used fresh corn off the cob, and it combined beautifully with the crunchy peppers, onions and chili cheese chips. (And is almost a "must" with its sweetness and bite, but if it isn't in season, then frozen is the next best thing.) I also used Hellman's lowfat mayo, and added a few tablespoons of taco seasoning to spice it up even more. This unique salad has many possibilities; Any color of bell pepper would work, and poblanos would be awesome as well. I noticed that some reviewers used it as a dip, and that would be a great way of enjoying too, as it's yummy even without the chips mixed in. And though there's no doubt the Fritos Scoops make excellent "dippers", (after all, a giant Frito corn chip surely surpasses a bite-size one ;-)) I'm thinking that taco-flavored Doritos would be just as fantastic, if not better. (Or why not go all out and serve both?) But definitely a keeper, and definitely impressive picnic and party fare. Thanks so much for sharing, Anna! :-)"
"Crunchy and flavorful, this a wonderful recipe! Even my husband, who doesn't usually care for corn, really liked this. I prepared this a few hours before dinner and that short amount of time sitting in the refrigerator made it taste even better than when I first mixed the ingredients. (I did wait to add the Fritos just before serving.) Fantastic recipe!"
"This is my 2014 go-to summer party dish. I have made it twice and was just asked to make it again for a party tomorrow. I do add a pouch of Hormel real bacon pieces and there are NO leftovers."

"This was a great side dish- the only modification I made was to reduce the mayo to 1/2c and adding 1/2c of lowfat sour cream and I left out the green pepper (food allergy). I'll be making this again!"

"I thought this could be a good salad to take to parties, so I tried it out on my Hubby, the guinea pig, first! He loved it. I scaled it down, since it was only needing to serve two of us, and I think maybe I cut the mayo too much. ( My GP didn't seem to notice!) I also added some bacon - to complete the UnHoly Trinity: mayo, cheese and bacon! I used canned corn, but I think this would be amazing with grilled and shucked fresh corn! So easy to make - will definitely be coming with me to the next summer party!"
"I wanted to use Paula's recipe as a "memory refresher" since I couldn't find my original salad recipe....in which I use Catalina Dressing instead of mayo. I like the Catalina for a summertime dressing. Paula's is wonderful, all the same!"
