"I didn't have apple pie filling (or any other kind) so I used Mini R's "Fried Apples" #10381. Although this increased the cooking time, it worked very well. However, I probably won't make this again as I found it too rich & sweet for my tastes."

"Made this for Cinqo de Mayo...delicious but a little sweet. I reduced the glaze by half but it was still a little sweet for us. I think it was because of the canned apple filling...I usually make own for pies from fresh apples. So its a personal preference probably."
"These are excellent, and so easy to make! I made these for a Cinco de Mayo potluck at work, using a 13x9 dish. Placed lengthwise, I was able to get ten enchiladas (two rows of five) in the dish. Even though there were more enchiladas, I used the same proportion for the sauce ingredients & still had plenty. Before ladling the sauce over the enchiladas, I sprinkled them liberally with more cinnamon. When the 20 minutes of baking was done, I pulled out the dish & spooned the sauce over the enchiladas, and then put them under the broiler to crisp up a bit. The house smelled wonderful while these were baking - like an apple pie! Served with Cool Whip ... these were a big hit at the potluck. Thanks for posting - I'm sure I'll use this recipe again, and will try it with different fillings & spices. -M =)"
