"This pasta is as easy to handle as regular wheat pasta. This recipe produces a good result. Do not allow pasta to dry out before cooking as it can become a little brittle. You can use the pasta as you would regular pasta. This recipe is not gluten free"

"very good recipe. I've made it a couple of times and I havn't found it too dry to work with. The last time I made it I did add a little bit of iced water to help make it more pliable and it came out great. I've made it by rolling it out by hand and while that was doable it produced a very uneven result and I when I didn't roll it thick enough it was terrible. Using a pasta maker was very easy and produced a beautiful result. I also floured the long sheets of pasta before running them through the noodle end and they separated more easily. I cooked and used them straight away and also cooked some, oiled them and kept them in the fridge ready to be heated and sauced like we used to do in an italian restaurant I used to work in. Thank you for posting. And no wonder the fat content on the nutritional table looks bad they've only counted the eggs, salt and oil.. :)"

"Terrific noodles! My husb and I have started making homemade spaghetti about once a week, and this is the first time we tried spelt noodles. The dough worried me a bit at first because of the dry, coarse texture, but what a pleasure to work with! The noodles actually separated into single strips after running through the pasta machine, where we are used to the regular egg noodles sticking together like crazy. "This was a nice and easy pasta recipe. My family is trying to cut out wheat when possible and we like the versatility of spelt. I used AP spelt flour but may try a mix of AP and WW in the future and perhaps a bit more than 2 cups (once we ran the pasta through the press, it stuck together a bit) so pieces don't clump together while cooking. Remember to flour the pasta as you go."

"This recipe is so easy to make and so nice to work with. I don't have a pasta maker so rolled the noodles out by hand and cut them into strips like fettucini. I had absolutely no problem with the dough sticking what so ever. These cooked for about 7 minutes in boiling water. I really enjoyed these. I have made spelt bread with spelt flour before but have never seen spelt pasta in stores, nor have I ever made any type of pasta before. I really enjoyed these with lentil tomato sauce, and think they would be awesome in lasagana. Thanks so much for a definite keeper Jubes!!!!"
"Great recipe, just a tad bit dry, but nothing a small amount of water couldn't remedy. Will try making a Vegan version next time."
