"The original recipe called for raw veal. I have changed it to use leftovers, add color and create more sauce. The fun here is that you can use other spices or herbs in place of nutmeg, add more veggies, whatever suits."

"What a clever idea!!! I never even considered making a bechamel sauce in the microwave. You are a genius. I made this tonight to start to use up my left-over turkey from Thanksgiving. So quick and easy. I honestly don't know about the ounces I used... the mushrooms (I had a handful), the bell pepper (about a quarter of one) and the turkey (enough that I thought would feed hubby and I). I served this with extra-wide egg noodles (that were boiling as I made this). We really enjoyed this quick dinner. Thank you for posting. (Made for PRMR)"

"I love using the microwave and I found this easy tasty recipe. I made it with cooked chicken; used skim milk Carnation instead of cream. I whisked the flour into the milk and add to the vegetable mixture; returned this to the microwave for 4 minutes, stirring after 2 minutes; addedp;the chicken and cooked another 2. "Very ver nice left over recipe for chicken! I made this today for a late lunch and scaled it down to one person easily. I used skim milk instead of cream since thats what I had on hand, and chicken broth instead of wine since thats what I had on hand at the time as well. I served this over whole wheat noodles for a very satisfying lunch. Next time I will try this with diffrent veggies and meat combos."
