"This is one I have been looking at for a long time. I haven't tried it yet but wanted to post it here for safe keeping and to allow others to try. From "125 Best Vegetarian Slow Cooker Recipes." I'd probably leave out the celery as I'm not a fan. The time to make does not include overnight soaking. Also, feel free to use a different soaking method, just make sure the beans are soaked and ready to go when you put this in the crockpot."

"I didn't have portabellas, so I used 16 oz of button mushrooms. I made a double recipe. I think next time, I'll make a double recipe of the veggies, but single of the beans and barley. This is very filling. Served with bread and salad, the double recipe made enough for 4 meals for our family of 4. I'm freezing the rest and we'll see how it does. Oh, and we added salt - definately needs salt. Our 2-year-old wasn't wild about it but the rest of us liked it, but did not love it. It was a lot of chopping - an hour of prep with a two and five year old "helping". It was very beige in color - except for the carrots."
