"Buffalo sauce, a mixture of melted butter and hot sauce, is a big claim to food fame for Buffalo, New York. It is normally served on fried chicken wings (Buffalo wings), but this burger is a great variation of the theme. The recipe is adapted from one published in my local newspaper and credited to David Joachim, author of The Tailgater's Cookbook. It was included in a feature on tailgating, and the idea was to get these ready to grill at home, then grill them at your tailgating affair. The original recipe called for either ground buffalo or ground beef. Since ground buffalo is not available where I live, I used ground beef. I forgot to notice how long prep took, so the time given is a guess. I served these on PaulaG's Sourdough Hamburger Buns--they are excellent and I highly recommend them."

"Excellent recipe. Very easy and very good. This time I used swiss cheese (didn't have blue cheese) and next time I think I'll try feta. The salty flavor of the feta will be really good. DH and I both LOVED the buffalo sauce. Adding it to the beef before cooking is definitely the way to go. Thanks for sharing."

"These were delicious! I did double the hot sauce amount to give them some more spice. They had great flavor with the hot sauce and blue cheese! I ate my burger with mayo, lettuce, tomato, and some onion. They would be good with even more blue cheese crumbled on top. This is a favorite for me!"

"Wow. These were the best burgers I've ever had. I didn't have blue cheese, so cut small pieces out of a block of mozzarella and I used celery salt instead of celery seeds. We did these on the grill for the 4th of July, and will DEFINITELY be making them again. Thanks!"
"All I can say is wow. I made these two different ways: one with the beef and then one with ground chicken. I grilled the beef burgers and cooked the chicken burgers on a non-stick griddle, and oh my were they good! The kick from the hot sauce, and the creaminess from the hot blue cheese was great. I also topped my burgers with ranch dressing just for a bit more creaminess in their texture. They were a big hit with my friends and family, and I will definately be making them again. Thanx!"
"These burgers are so hearty and tangy! I used a half and half combo of beef and turkey for the patties and they were juicy and flavorful. I also used a bit more of the sauce in the meat mixture and omitted the celery seeds. These actually taste better than Bufffalo wings to me."
"These were really, really good burgers. I have a weakness for burgers anyway and these were so worth indulging in. The sauce was perfect for even a wimp like me. "What a great idea! We love buffalo wings and shrimp so this was sure to please. I used beef but a leaner grind â€“ 93/7 â€“ and Texas Peteâ€™s hot sauce. Adapted to use 1 pound of beef & mozzarella rather than blue cheese ( _personal taste_ ), these were some very tasty & *moist* burgers! After mixing and shaping, the patties were rather loose but when chilled for 2 hours, they held together perfectly. Being a grill-shunner, I pan-fried ours and didnâ€™t really time them â€“ we like ours cooked through so I go by clear juices. To our galvanized taste buds, the heat was very mild so I also brushed the insides of the buns with the sauce and served more on the side for dousing/dipping. We dressed them with recipe #218357 and lettuce â€“ they really didnâ€™t need the usual additions of tomato, pickles, mustard, etc. Surely a recipe to repeat many times over! Thanks for posting this!"
