"A quick, no-fuss version of chicken tortilla soup! All you do is put everything into the slow cooker, and turn it on. Then garnish with baked corn tortilla strips. What a dish."
Serving Size: 1 (237 g)
Servings Per Recipe: 8
"This soup was wonderful! I am always looking for a light soup for rainy days and this one was perfect. I also learned a trick for shredding the chicken: after boiling, use your kitchen aid mixer and paddle attachment -- put on low for around 30 seconds and it shreds perfectly. This soup is definitely a make again!"
"I put my chicken breasts in partially frozen and shredded the chicken the last hour of cooking. Also, I had to use taco sauce instead enchilada -- not sure what the difference is, but it was good!"
"Amazing and so easy. My picky husband even at it! 1-3-09 Update I have lost count of how many times I have made this. I add frozen chicken to the soup and shred an hour before serving and I usually omit the water."
"Easy and yummy! I used green enchilada sauce b/c that's what I had! I also used fire-roasted diced tomatoes. Garnished with chopped cilantro and lime juice. Took the lazy way out and just crushed some tortilla chips on top instead of baking my own tortilla strips."
"This tasted better than what I get in a restaurant! Love it!!!!"
"This recipe is super yummy! I've been meaning to write this review, I've made it a few times already and each time it gets more delicious! I had to cook for 25 guests and they were all raving about it..made me feel awesome since I'm barely learning how to cook. I love food.com it makes cooking so easy and thanks to all these wonderful cooks to share their recipes with us! If anyone wants to make a yummy Mexican soup this is the one to try, you won't regret it! :)"
"Followed the recipe exactly & it was wonderful!"
"Loved it! I have made this twice, I did not have a bay leaf either times and the second time I added black beans. Turned out great both times!!"
"My husband likes this."
"Made exactly as written, this was well liked by my family. We all had the same complaint though, too much heat. I will make it again but will halve the spices or perhaps use taco seasoning. I used two cups of leftover T-day turkey and cooked it for four hours."
"I would make this 5 stars with my changes. I thought I had chili powder, but didn't. So instead used about 1-1/2 Tbs peppers in adobo (pureed) and instead of adding corn, I added drained and rinsed black beans. It was delicious topped with sour cream, shredded cheese, crushed tortillas, avocado, sliced black olives, etc. Very easy and will definitely do this one again!"
"Sorry but this was not a hit with us. It had heat but not much flavor and tasted watery to me even though I didn't add the water listed in the recipe."
"Very good! I didn't have enchilada sauce, so I threw in an entire 28 oz can of mashed tomatoes (instead of the called-for 15 oz can). I also added an extra tbsp of chili powder, 1/2 tsp cumin, 1/2 tsp salt and a pinch of garlic powder. This is on top of the other spices already in the recipe! Garnished the soup with green onion and sour cream... Delish!"
"Halved the recipe.Skipped the water, but used at least double the chicken broth. Used cooked spicy tomatillo salsa instead of canned enchilada sauce and 1 pickled jalepeno chopped instead of the chilies. Came out very spicy and delicious."
"This was so good and easy to make! I usually make a thicker, cheesier version that requires more preparation, but liked this one just ask much. I added the raw chicken breasts to the crock pot like others suggested and then shredded it when the soup was close to done. I used a can of diced fire roasted tomatoes with garlic and really liked the flavor they added. One other addition was to add 5 torn up corn tortillas with all the other ingredients. They added a lot of flavor and thickened the soup up a bit. The other recipe I make has 10-12 tortillas but I just wanted to thicken it a little. Looking forward to another bowl today for lunch!"
"Wonderful & easy. I didn't have canned tomatos so processed about 5 in the blender, added juice from 1 fresh lime, and a can of black beans. YUMMY!! Loved this soup."
"Great tortilla soup! I used a jar of taco sauce, rather than enchilada sauce, and added some cut up celery and carrots to the mix (rather than green chili peppers), as well & added some cut up corn tortillas in the last hour... So delicious!!! Top with avacado for an extra yummy touch!! Thanks for the awesome recipe!"
"Sorry, I'm not giving this five stars, but it wasn't something I would make again, but, it wasn't bad, either. I guess we are still hooked on the "Skinny tortilla soup" from Taste of Home, it is very easy and creamier(you add refried beans)."
"very good recipe!! Yummy and hubby loves it. thanks!!"
"What can I say that hasn't already been said?? What a wonderful soup! We really enjoyed it. I sent some to my neighbor, she wasn't feeling to chipper, and she said it made her feel soooo much better. Easy to put together and served with crushed tortilla chips, cheese and sour cream. Husband wants it again tonight...cool...no cooking for this old gal. Thanks for sharing."
