"This was one of my favorite meals that we've made from Recipezaar recipes. We did make some changes. We used about 10" of Conecuh sausage instead of chorizo. We diced it so that it was nice and small. We used a whole mango. We did not use oregano or a bay leaf. Instead, we used 1t of coriander. The best part is that we used coconut milk in place of water (a whole can). We mixed everything as directed (sans crushed red pepper), but added the black beans to the rice so that it made a bed of rice and black beans to smother with the sauce. It was sooooooooooo good. I can't wait to eat the leftovers tomorrow."

"Very good. I used 2 cups dried beans rather than canned and cooked according to package directions + added a bit of seasoning. I think a can of beans is equal to 1 1/2 cups +/- I also used more meat than called for (even for the extra beans I made). Also I used papaya rather than mago since I dislike mango. All in all it was very good, easy to make and the fruit was nice after a very hot day. DH said he would like banana on his next time since we found out tonight that he doesn't like papaya. I think I may try doing different fruits or even a tropical fruit salad. Plantains would also be nice. Thanks for another good one. "
