"I have seen alot of Beef vegie soups but not like this one. I like to use leftover Roast beef or get some at the deli. I sometimes make in crockpot for 8-12 hours on low. You may need to check on it. The potatoes thicken it and the tomatoes give body to the broth."

"Perfectly delicious!!! However, I used 1 1/4 lb of ground chuck. Can't imagine it with just 1/2 lb. The only other tweeks was I added roughly 2 cups of v8 juice, just because I had it... and only 4 potatoes.<br/> <br/>Anyways, I will discard other vegetable beef recipes I have tried, as this is perfect! <br/><br/>Thanks!"
"This soup was absolutely delicious. Yummy for the tummy. I love soups and this one is a keeper. I used about 1 lb of fresh sirloin cubes, I browned it with some flour and seasoning salt and garlic powder then added everything else. I used about 8 cups of beef broth and after adding 3 potatoes I found it to be plenty. Guess it depends on the size of the potatoes. The house sure smelled great after simmering for about 2 hours. "This is a delicious, hearty, satisfying, simple to make stew! I used 1 lb of cubed stew beef and feel like there wasn't quite enough beef for my liking. I think 2 lbs would be perfect."
"This was sooo good!!!! I made a large pot and shared it with my mom and sister. Even my boyfriend liked it and he is very picky. I used sirloin beef cubes (fresh) and added 1 cup of wine instead of the 1/2 cup. Definately will keep this available and will make again."

"Great soup! I made this on top of the stove using the ingredients listed but adjusting the prep slightly. I used fresh beef cut into small pieces that I browned first as I did not have any leftover beef to use, I also sauteed an onion and fresh garlic in oil. I used 4 cups beef broth and 2 cups water, as it would have been way too strong a beef flavor with using fresh beef in place of cooked. Thanks Karen, my DH will enjoy this!...Kitten:)"
"This is a wonderful soup! The only beef/veg my family will eat. Sometimes I add a can of tiny green sweet peas only because I like them but it adds nothing to the soup really. Like I said just because I like them, the soup doesn't need any of "my touches" Thanks for the recipe..I follow it exactly for the best results..It go's well with a loaf of crusty bread and a nice salad. If there is any left this soup taste better the 2nd day. Always a hit at work potlucks!"
