However, my dietitian and I have tried to make it low-sugar/low-carb."

"Thought I'd try something really different for hubby's birthday cake. He said it was terrific, but a little too rich-tasting. I had added a tsp of vanilla.. perhaps next time I'll add coconut extract instead, as the pineapple taste pretty much overpowered the pie. It set up beautifully in about 3 hrs. Also put it in a regular pie crust rather than the cookie crust. It totally filled the pie shell, which is another reason for the higher rating. Only missed one star because, for my tastes, it was too rich. Thanks for sharing!"
