"Tasty tortillas filled with chicken, spring onions and goats' cheese or, for a milder cheese flavouring, replace the tangy goats' cheese with ricotta cheese or any other soft cheese. Served with avocado and garlic dip, diced cucumber and tomatoes, these are ideal for a light meal or a supper snack. Tortillas have been a staple of the Mexican diet since the time of the Aztecs. I have adapted this recipe, from an International Masters '1001 recipes for pan or wok' recipe card, and posted it for the 2005 Zaar World Tour. 350g = 12 ounces; 175g = 6 ounces."

"We made these quesadillas for dinner last night and I really enjoyed them! I love goat cheese, so I knew that I would love this dish. I grilled my chicken on the BBQ before shredding it, which made it nice and tender and juicy. I followed all of the ingredients and instructions as posted. I didn't even top it with anything, it was good on it's own, though I do think tomato would be nice as you mentioned. I'll certainly make this again. Made for ZWT5. Thanks!"
"What a divine twist on the traditional quesadilla. I used fat free ricotta, a suggested alternative and tossed a couple of mushrooms into the filling. "What a great, fast, treat for lunch! Absolutely adored this. The only sad part is that after making this, I had to go find Dennis, who was sitting squarely on the tractor. The Quesadilla help up great as I had to run behind him to grab his attention. I seriously followed this exactly, loved the addition of chili sauce, and didn't add the egg white, as it held together firmly. I managed to slip bits of sliced tomato into the folded cheesy, chicken delight, and it really was terrific, with or without the extra tomato. I used shredded rotisserie chicken, along with a mixture of goat cheese & cheddar. Perfect, bluemoon! Will make this often ~ Made for *I Recommend* game."
"We eat quesadillas on a weekly basis! I used feta and added a few sun-dried tomatoes. I had never thought about using the egg white to seal them, and it really works. I enjoyed the chili sauce which gave it extra flavor. Thanks Bluemoon! Roxygirl"

"Totally different take on the ordinary quesadilla. I really enjoyed this. Didnt use the egg white- didnt need it bc i used queso blanco- which when melted makes everything stick together- you would need it though if using a cheese like goat or ricotta- fresh coriander is simply fresh cilantro here in the states- Nice fresh flavor and a great combo- thanks blue! "Nice! I used a mixture of green onions and shallots and used queso-fresco instead of goat cheese. Since i used small tortillas I did not need the egg whites, I simply put a weight on top while they cooked. Thanks bluemoon!"
