"I am giving this 5 stars for several reasons (1) my husband, teenage son, and college-aged daughter all loved it and went back for seconds. That right there is hard to find! I'd call THAT a rave review! (2) Easy to prepare with many common ingredients I often keep on hand. I substituted flour tortillas, but think corn tortillas might have actually been better. (3) Low fat ingredients = low WW PointsPlus value! Everything in this recipe (other than tortillas) can be a "filling food" making this an excellent WW meal! (4) Huge servings! In inadvertently forgot to cook a vegetable making this the only thing on our plates. It was plenty to fill my belly. (5) Great and versatile flavor. Others have talked about adding more taco seasoning but I thought it was perfect as is. It is easy enough to top with hot salsa if you want to add some heat. I served without extra toppings, but I think the addition of cilantro (as suggested), some baked tortilla ships, salsa, and black olives would really take this to a higher level.
Sadly, my husband and kids ate all of it at dinner tonight so no leftovers for me. I will definately make this again as my husband said "This one is a keeper!" Thanks for sharing!"

"This casserole tastes great! Made it exactly as instructed. Excellent flavors. Topped with shredded lettuce, chopped tomatoes and sour cream. Now the bad news - this recipe is 9 points under the new WW points plus program. Worth every point for the large portion you get!"
"Great flavor! We added a lot more jalape?os for some extra kick. Topped it with lettuce, cilantro, more tomatoes and I added some black olives! Also, I mixed the sour cream with some taco seasoning. It adds a great bit of extra flavor.

"Delicious and easy! :) Makes a lot of food but they are great leftovers. I added an extra packet of the hot taco seasoning as some people suggested and the Rotel canned tomatoes with chilies. Spicy and yummy! Everyone loved it."
"This was fantastic!! I used the corn tortillas and mixed the cilantro in when adding the veggies, it made it very good. I ate mine with a little salsa, lettuce and tomatoes on top and was a very filling meal that was all the food groups in one."
"SERIOUSLY? One-third cup shredded reduced-fat cheese in a 12"x8" casserole? I realize that it will up the the points to add more cheese, but why even have the cheese if it's only one-third cup? This recipe seems like it will be very good and healthy, though. Just don't expect to taste the cheese."

"I made a vegetarian version of this and it was really good. I found whole wheat tortillas made a better bottom layer than chips, which I also tried out. I used the canned diced tomatoes with Chilis which added a nice kick to it. My husband did make fun of how it looked, but it tasted great and froze well too."

"Delicious! The second time we made it we left out the corn tortilla because it was gummy for left overs. We used it in taco shells and the next left over meal made nachos. In my file I changed the name from casserole to dip. Definitely a hit with everyone. And so colorful. No one suspected it was a WW recipe!"
"I used salsa instead of the tomatoes and it turned out fantastic! Used chips instead of the tortillas and cooked the whole thing on the stove in a covered pan.

"Really good and very easy. Mine wasn't as light as the recipe (light sour cream, regular cheddar) but still very healthy. Used a can of tomatoes rather than fresh and frozen corn. Baking covered helps the corn tortillas soften up. Served with a green salad for an easy weeknight dinner. Will definitely make again! Thanks for sharing!"
"I just finished off the half of this recipe that I froze. It was really good. I left out the cilantro since I don't care for it but otherwise followed the recipe. I'll put this in regular rotation."
"I have not tried this yet, but will very soon. Since my husband does not like really spicy foods I am going to eliminate the jalapenos and use diced tomatos that have jalapenos in them as they are not as strong - just enough kick. I have also found a recipe to make my own taco seasoning so that I can reduce the sodium in the dish."
