"Scrambling eggs in the microwave is a one dish affair. No muss, no fuss. These come out perfectly and taste delicious. Found this in an issue of Everyday Food. Microwave cooking times vary and mine actually needs 55 seconds at each step instead of the 45 seconds listed. Don't add extra salt until you've tasted it."

"This recipe has been a life saver! Mornings are SO busy in our home & we are a family who likes to have eggs for breakfast. Making them the way we like them is very time consuming, so this is perfect, & a very healthy quick way for breakfast! I use a coffee mug & spray it with Pam. I use 1 egg white & 1 whole egg. It is also great since we can each add anything we want depending on our tastes that day! I can have spinach, red pepper, & a bit of feta & eat it on toast. My DH can add in precooked bacon, spinach, & cheese throw it in a wrap on the way to work. DS can just have cheese & salsa & eat it out of the mug! Everyone can make their own bfast mugs & we are out the door quickly & everyone is happy! SUPER! Thank you for the recipe! We make it every morning now!"

"I've made this frequently...I tried fresh rosemary & feta as suggested, as well as tomatoes, asiago & green peppers, as in the picture. I think I'll try salsa and cheddar with some avocado...or finely chopped spinach and mushrooms. This is great for quick experiments!! Thanks!"

"Great directions for a quick, colorful and yummy breakfast. Didn't feel it needed additional salt and pepper. Highly suggest the Omega-3 eggs for a health boost at breakfast. "When my stovetop and oven went on the fritz, I tried this microwaved version for my vegetarian family. What a great alternative! "I have been cooking scrambled eggs in the microwave for years, but this recipe tastes even better than the one I had been using. GREAT flavor and creamy, just as written, but this recipe wopuld also be great to experiment with. You could add any mumber of other ingrediants, such as crumpled bacon or sausage, green chiles, Pepper Jack cheese, a dash of hot sauce, green salsa, potatoe dices, etc. I agree with Chef Redbelly and another reviewer that you may have to experiment with the cookig times - my microwave also required longer cooking times (if required, cook additionally in small incriments of time, as eggs are easy to overcook in the microwave). I plan to use this recipe as my new staple!"
"Thanks for posting such a simple recipe. Perfect "breakfast for one" recipe. Made it this morning and only added milk, salt, black pepper and cheddar. This is how I shall prepare from now on! I agree with not salting until tasted. P.S. I had to cook longer due to the difference in our microwaves."
