"Next best to the original! On our visit to the Caribbean, we brought home the best Rum Cake I've ever had.... in fact it's the very best of all cakes I've ever had!!! I then thought I'd send for some to be shipped to us and found the price to be $35 for the med. size ( I paid $18 on the Island) So my search for the recipe began! You can not purchase Tortuga Rum ANYWHERE except in the Caribbean - Whaler's Vanille Rum should be a close match. This next best copy-cat comes from Newsgroup Rec.food.recipes."
Serving Size: 1 (162 g)
Servings Per Recipe: 12
"Delicious cake however, I found that we liked the glaze better with the rum cooked WITH the butter, water and sugar rather than adding it at the end. It gave the syrup a wonderful flavor. Adding the rum at the end just tasted too....raw. Thank you!"
"AMAZING! I get rave reviews from everyone who tastes it and it is soooo easy! Easy way to look like a PRO! I use a yellow or butter cake mix instead of the basic and you can interchage the puddings. Pistachio, banana and french vanilla have been awesome. Also, you can make MORE glaze if you like to put on top and bottom. Cake needs to sit overnight if possible. Thank you for this recipe!"
"Made this for Christmas with good family reviews. I also tryed a individual 6 count, small bundt pan for smaller cakes. The recipe makes about 14 smaller bundt cakes if using the 6 count, small bundt pans. The kicker here the smaller cakes are terrific for individual gifts and are absolutly fantastic with hot coffee."
"I never liked rum cake because it usually tastes like someone just poured an entire bottle of booze over it. This one is different. It tastes heavenly! I substituted Cruzan Vanilla Rum, Banana Cream pudding mix and pecans instead of what's called for. EVERYONE will be asking for this recipe. Make it for Thanksgiving and enjoy the compliments."
"I have made it several times with Rum at home... I personally love mixing 1/2 Meyers rum and 1/2 light rum with a tsp of vanilla bean paste. IT IS BY FAR THE BEST CAKE I HAVE EVER EATEN!!!!! People LOVE this cake, never a crumb left! I will have to try the whalers Rum next time! A great recipe Trust me folks you can't go wrong with this one!!"
"I made this cake for christmas it was great. I did not have vanilla rum, but i had captain morgan spice rum and meyers rumas well as some vanilla beans. I took the vaniila beans and the spiced rum soak them for two days used that instead and took a tablespoon of the meyers rum soak in vanilla beans and used that as well it was excellent."
"This cake is the best cake I have ever cooked or tasted for that matter. My family always begs me to cook this when we all get together for the holidays. I will sometimes change the flavor of the pudding mix to slighly change the taste of the cake, for instance, I have used a chocolate pudding mix and even a key lime pudding mix instead of the vanilla flavored pudding mix, YUMMY!!!!!"
"Thank you for this recipe. I, too, have fallen in love with the Tortuga Rum Cakes ever since a relative of mine brought back some from her trip to the Cayman Islands. This recipe is spot on. I didn't change a thing. Except that I was lucky enough to locate some REAL Tortuga Banana Rum at Bevmo so I made a Tortuga Banana Rum Cake. It was delicious. Everyone said it tasted like the real thing. Thank you thank you for this wonderful recipe. God bless:-)"
"Very nice! I used Recipe #87689 as a substitute for Cake Flour, I also used Trader Vic rum. I added Macadamia Nuts instead of walnuts, and I added some shredded coconut flakes into the batter. After all that, I topped it with french vanilla pudding. It was still delicious! Thank you for posting!!!"
"I think this might be the best cake I've ever made! Initially seeing the 3 parts of the recipe looked complicated but it was really easy. I didn't have cake flour so I made my own by using 3/4 cup of all purpose flour and 1/4 of corn starch. The only Vanilla rum I found was Cruzan and it worked out well. I sprayed the cake pan with Pam and was afraid the cake wouldn't come out of the pan but it did with a little help and some prayers! Everyone LOVED the cake. Try this recipe, you won't be sorry. Thanks for the recipe."
"I've used this recipe about half a dozen times in the past 4 years to make this rum cake. I ALWAYS get rave reviews when I make it. The first time was at a cookout and everyone there was hesitant to try it at first, I think they tried it to be nice. That was until they actually ate it. I had 5 people request the recipe and one who invited me over the next weekend to make it with her. I took it to work for a Christmas party and it was gone in 20 minutes. This is by far the best recipe out there for this rum cake, and it tastes as good, if not better, then the original. Thank you again, I'm about to make another one tomorrow!"
"I am not a chef by any means but love to cook for friends and family. I had this cake page bookmarked for the last 6 months waiting for our yearly Fire Department cake sale. The cake sale is a once a year event where funds are raised to purchase equipment for our volunteer fire fighters. Anyway, Deb was not sure that I should try a new recipe and sell it to someone until we tried it ourselves. I made this cake Thursday night which we enjoyed with family/friends on Friday night I made another which was auctioned off Saturday night at the fire station. Everyone who we shared our cake with LOVED IT ! If you follow the directions, you can't miss! The cake sold for 250.00!"
"This has got to be the BEST recipe here. I've made this cake a few times and have received nothing by raves. The only change I made was I did not use cake flour; instead, I used 1 3/4c AP flour and 1/4c corn starch.
"22 Minutes...that's how long it took for this to disappear. I used Myer's Rum as well, and mixed 1/2 cup finely ground walnuts into the cake itself...otherwise, I made it as directed...they loved it. Wonderful recipe!"
"I never leave revies, but this cake was soooooooo good that I registered just so I could say Thank You for the awsome receipe."
"Try it once and you will be hooked! No other rum cake recipe can come close to this one. I made my first cake three days ago and it dissapeared so quick that I had to make another one today so I could share it with more of my friends. I want to try this recipe with different liquors and pudding mixes. Thank you kindly for this over the top recipe."
"Oddly, this is nearly identical to my own run cake recipe(which I've not posted due to my belief that it is just my secret) and thus will rate it as if it were(just because I want to). I use Jamaican or Nicaraguan rums and also the cooked type of pudding rather than instant. I recommend playing with the flavor by adding cocoa to the cake or using different flavors of pudding mix."
"I created a Pina Colada variation of this recipe by substituting coconut oil for the vegtable oil and using Pina Colada mixer with powdered buttermilk instead of plain milk. In the glaze I substituted the Pina Colada mixer for the water and cut back the sugar by 1/3 cup. Everyone loved it! It was so fabulous it brought tears to the eyes!"
"This is the best cake recipe ever - hands down. Although there seem to be a lot of step, it's EASY to make. I have used it with Cruzan Vanilla Rum for the past few years. I believe the only way it can taste better is with "real" Tortuga Vanilla Rum. Since I live in FL, I thought I could get it from one of my cruising friends, but it's hard to find in the Bahamas too. Well, I finally received it - my friends said there were two bottles on the shelf, I baked the cake with the "real thing" last night - it turned out perfectly. I am taking it to my sister's annual Christmas party, where the attendees always rave about it. They are in for a treat!"
"This cake is wonderful and tastes divine. I used a dark coconut rum and everyone loved it. My mother even said "This cake is really good, even with the rum in it!" Will never go back to my old recipe again."
